Chocolate chunk muffins


Okay, so these are to DIE for. Chocolatey, chunky, gooey goodness. So yummy. And they are on the healthy side to boot! Inspired by Dashing Dish. Sorry for the crappy photography--I was clearly too excited to eat these babies to steady my hands for a decent picture.


CHOCOLATE CHUNK MUFFINS 

1 3/4 c. oats
2 eggs
3/4 c. unsweetened cocoa
1/2 c. unsweetened applesauce
1 tsp. almond extract
1/2 c. plain Greek yogurt
1/2 tsp. cream of tartar (or 2 tsp. vinegar)
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/4 tsp. salt
1 c. hot water
1/2 c.white sugar
1/2 c. 60% cacao chocolate chips

1. Preheat oven to 350 degrees. Coat the cups of a 12-cup muffin pan with canola oil.
2. In a blender, grind the oats. Then, add the rest of the ingredients, except for the chips, and mix well.
3. Stir in the chocolate chips and pour the mixture into muffin pan.
4. Bake for 12-15 minutes.



Nutrition info, per muffin: 135 calories, 4.4 g fat, 23.3 g carbs, 4.7 g protein
